Slimming World’s EE SP Plan Day 4

So today was always going to be a busy one and I knew I’d have to plan my meals well in advance to give me the time and energy I’d need to get through it!

Overnight oats SP style – right I think I cracked it this time!  So last night I took half a tub of quark and added some water to it and gave it a good stir to thin it out to the consistency of yogurt.  I then added a few drops of vanilla essence to it and about a quarter teaspoon of lemon essence.  Another good stir, a quick taste and I was satisfied that it was the consistency of yogurt and tasted good.  I then added 35g of oats (HEB) to the quark and stirred it well.  It went super thick, super quick though as I stirred, so I then added enough water to it again to thin it out and it resembled how overnight oats usually looks with yogurt added.  This morning I topped it with chopped strawberries, some raspberries and a little sweetener and it was really, really good!  I’m not sure you’d know it was quark to be honest!

So this morning was toddler yoga, yes you read that right, toddler yoga!  The little one and I always have such a good time and today was no exception!  Afterwards we nipped to the shops because I had ran out of strawberries and raspberries (in fact my fridge is looking a little bare, I can’t believe how much fruit and veg we’re getting through!  As usual we walked there and back.  When we got home, I was a little peckish so I had three of my mini quiches to see me through until lunch.

Every Thursday evening at the moment I attend a Fitness Pilates class from 7.20pm to 8.20pm so I have to rush off after the little one goes to bed and have tea when I get in later.  So I knew I needed a pretty decent lunch and some good afternoon snacks to help get me through until then.

For lunch I made myself a salad and salmon wrap, flaking half of the salmon fillet I cooked last night and using a gluten free wrap as my second HEB.  I also had the 3 remaining mini quiches that I made yesterday.

This afternoon we headed out on foot again, this time with Daddy in tow, to our little one’s 2 year review with the Health Visitor. Who was happy to confirm that she is a healthy, happy little girl with no issues other than those most toddlers suffer from – mainly being a picky eater!

In the afternoon I prepared a nice big salad for our tea to go with our baked bean and cheese omelette which I will cook when I return home from fitness pilates later on.  It always needs to be something quick and simple to put together as it’s quite late when I get in and I’m usually exhausted afterwards.

When I finally got to sit down this afternoon, lol, I had half a tub of cottage cheese and a large apple as well as some syns, a packet of Space Raiders (3 syns) and a Cadbury’s Freddo (5 syns) which would hopefully see me through to this evening.

My fitness pilates was the usual combination of hard work and good fun but it went on a bit late tonight so by the time I’d walked home it was 9pm.  Thank goodness I’d prepared the tea!

Quark mixed with a sachet of orange Options hot chocolate (2 syns), topped with strawberries and raspberries (sorry started tucking into this before realising I hadn’t taken a pic).  To me this tasted just like Terry’s Chocolate Orange – gorgeous, I shall be making this again!

Weigh in Day: Thursday 30th April 2015

For those who don’t know I am currently following Slimming World’s EE SP Plan from Monday to Monday this week but Thursday is my normal weigh in day, and so here’s this weeks loss: 1lb

I know, I know, a loss is a loss, and it’s not a gain but because I’ve been following SP for three days prior to this weigh in, I feel a tad disappointed about a 1lb loss for the week.  Especially given that I usually lose 2lb a week following the normal EE and Red days, and often 4 or 5lbs on a really good week – last week I lost 4lb!  So I think it’s unlikely that on Monday I’m going to be seeing the 7-10lb loss I’d been hoping for after seeing them so regularly on Facebook when people have followed the SP plan for 7 days.  I may be wrong though!  As I said in an earlier post, only time will tell.  If SP doesn’t work for me, at least I tried it the once!

Slimming World’s EE SP Plan Day 3

It’s the third day for me on EE SP today, I’m almost half way there!  So I woke early (again!) and prepared a spiced cabbage soup for lunch (recipe here) using the other half of the Savoy cabbage from last night’s tea.

Then I prepared breakfast:

30g Mini Choc Weetabix (HEB) with half a tub of Arla raspberry quark yogurt (half a syn – see yesterdays post re lunch for more info), strawberries and raspberries and a little sweetener, this was the tastiest breakfast I’ve had so far.  The Arla quark yogurt is really growing on me!

The weather hasn’t been all that nice here today, so the little one and I spent the first part of the morning making crustless mini quiches suitable for SP for me to eat over the next couple of days.  I’m not going to reinvent the wheel here and give you the recipe, as there are so many out there already.  If you go to a search engine such as Google and type in ‘Slimming World Crustless Quiches’ (throw in the word ‘mini’ too if you want them little like mine) and you’ll see there are lots out there already.  As you can see I lined the cases with wafer thin ham before filling and they turned out very nicely indeed.  Mine included a few tbsp. of baked beans, a few tbsp. of cottage cheese, red pepper, courgette, small pieces of cooked chicken, salt, pepper and four eggs.  I have to admit that once the 12 little delights had cooled I did have a couple whilst popping them in the fridge – I couldn’t resist!  They’re full of free SP foods after all!

After making our mini quiches we went out with the pram to Sainsburys to pick up some ‘bits’, including more quark and some vanilla and lemon essence as someone suggested adding it to quark on one of the Facebook pages I follow.

The above is the most filling lunch I’ve had so far, I was absolutely stuffed after it!

Later in the afternoon though, I got a little peckish and my daughter’s Easter egg stash began to beckon.  So I dug out my Cadbury Mini Egg stash and ate 8 of those instead (6 syns – they’re 1.5 syns for 2), followed a little later on by a bag of beef Space Raiders from a multi-pack (3 syns).

I also snacked on some chicken whilst the little one had her tea.

Dinner

Syn free salt and pepper pan fried salmon (see how I make this here) with swede chips (and how I make these here) and a nice big salad.  I nibbled on my HEA of cheese whilst I cooked and I also cooked the other salmon fillet at the same time, so I can have it cold for lunch tomorrow.
For pudding I had half a tub of quark mixed with sachet of white chocolate Options hot chocolate, topped with chopped strawberries and raspberries.  This is fast becoming a favourite of mine, I even picked up some more white chocolate Options sachets when we went out today!

Something I haven’t mentioned is that my plate is a 10 inch plate rather than the usual 12 inch plate, a slimming trick I know helps you eat less.  Here’s our plates this evening – the hubby has a 12 inch plate and had SW chips and steak as he’s not keen on salmon or swede.

Recipe: Spiced Cabbage Soup – syn free and super speedy!

So I was up early again this morning.  My body does this sometimes, decides that it’s perfectly okay to wake at 5am!  Anyway, I decided to use the time efficiently and make a soup for our lunch today using the other half of the Savoy cabbage from last night’s tea.
Spiced Cabbage Soup - syn free on all plans!
Spiced Cabbage Soup

Syn free on EE, EE SP, Red Days and Green Days
Makes about 4 bowls worth

Ingredients
– Half a head of cabbage, chopped
– One stick of celery, chopped
– One carrot, chopped
– Half a large onion, chopped
– One green pepper, chopped
– 2 cloves of garlic, finely chopped
– A pint of boiling water
– One chicken stock cube
– Carton of pasatta
– 1 tsp of dried oregano
– 1 tsp of cumin powder
– Black pepper
– Low calorie spray

Method
Spray a heavy bottomed saucepan with low cal spray and heat over a gentle heat.  Add onion, celery, carrot and green pepper to the pan and cook until the veg is tender.  Stir in garlic.  Pour in boiling water and crumble in the stock cube.  Stir in pasatta, dried oregano and cumin powder and add the cabbage to the pan.  Bring to a boil and simmer for 10 minutes or so or until the cabbage and other vegetables are tender, season well with black pepper.  Blitz in a food processor or with a hand blender until thick and smooth adding more water if necessary.  Then serve and enjoy – I will be reheating mine later although when I tested the soup I understood why some people have soup for breakfast because it tasted very nice and I was tempted, lol!  Should keep for 3 days if kept in the fridge.

Slimming World’s EE SP Plan Day 2

So day 2  of my week on Slimming World’s EE SP plan has been another good day but I’ve felt rather lethargic and a bit waffy on and off, I’m hoping it will pass and my body will get used to it soon.

So I got up early this morning and prepared the slow cooker for this evening’s tea, we’re having Lightly Spiced Slow Cooked Gammon (please click here for the recipe.) The house has smelled absolutely amazing all day and we couldn’t wait for tea time to come!  It’s lovely knowing that you won’t have to start cooking later on and that it’s all there ready for you to serve up (well apart from pan frying some cabbage but that’s not exactly onerous, lol!)

Overnight oats SP style – last night I mixed 100g of quark with 35g oats (HEB) and a little water as the quark was too thick to mix in on it’s own (I like to mix rather than layer my overnight oats, otherwise I find it too dry – it would definately be too dry with quark). I left it overnight and topped with raspberries and strawberries this morning. It was nice, but a little bland. I think you’ll only like it if you like quark to begin with. Next time, and I do plan on doing it again, I will mix in some frozen berries the night before and add a little sweetener. I think that will help give it the combined sweet and sour flavours that it lacks without the yogurt.

So this morning the little one and myself attended our usual Tuesday morning dancing class.  This involves a 30 minute walk up a very steep hill to get there, lots of silly dancing whilst we’re there and then the walk home via the park and a brief visit to the duck pond – we like to feed ducks, can you tell?  As I said earlier I found myself struggling for energy a bit today, especially during the walk up the hill but I got over it and managed to go without a snack until lunch time.

Another nice big salad with lettuce, baby plum tomatoes, cucumber and yellow pepper seasoned with salt, black pepper and vinegar.  Topped today with cooked ham which I cubed (leftover from our Sunday evening meal) and cottage cheese.  Again I had a warmed gluten free ciabatta as my second HEB.
For dessert I had an Arla Protein Raspberry yogurt – but Laura you shouldn’t have yogurts on SP days, I hear you cry!  Well these are new and they aren’t yogurts in the traditional sense.  They’re 91% quark and the rest is fruit etc.  It was quite tasty but it was very obviously still quark and not as yogurt like as one might hope it to be.  But as a substitute and at only 1 syn per pot, it was a nice way to finish my lunch and I did feel suitably full afterwards.

Mid afternoon I enjoyed my syns as per usual – a packet of Metcalfe’s Sweet and Salty Topcorn (4 syns) and six pieces of Green and Black’s 70% Dark Chocolate (6 syns).

At about 4pm I got a little peckish so I segmented an orange and ate that, very refreshing and it filled me up until teatime.  I also had two slices of mature Low Low cheese as my HEA for the day.

For pudding I had half a tub of quark mixed with a sachet of Cadbury’s Bourneville Highlights Hot Chocolate (2 syns) topped with strawberries and raspberries.

Total cups of water: 10 – I’m not intentionally drinking more than usual so maybe it’s a side effect of SP, not a bad thing surely!

Recipe: Syn Free Lightly Spiced Slow Cooked Gammon

This is one of my go to slow cooker recipes which I came up with earlier this year.  It’s delicious and very simple to throw together early in the morning.  You can add potatoes to it on an EE day or serve it with rice or pasta but this evening, on my second day of EE SP I’m going to have it with Savoy cabbage – very nice indeed!

Tea - Slimming World SP Plane Day 2

Lightly Spiced Slow Cooked Gammon
Free on EE and EE SP
Serves 2

Ingredients
– 1 Gammon joint
– soaked in cold water overnight to draw out some salt
– 1 Onion, roughly chopped
– 2 Leeks, cut into thick round
– Red, yellow and green peppers, cut into 1cm pieces
– 1 Carrot, roughly chopped
– 1 stick of celery, roughly chopped
– 2 Garlic Cloves
– 2 heaped teaspoons of garam masala
– Quarter teaspoon of chilli powder
– Half a teaspoon of chilli flakes
– 1 Chicken stock cube
– 1 Vegetable stock cube
– Half a carton of passata
– A tablespoon of tomato puree
– 1 and a half pints of boiling water
– Black pepper
– Tin of cannellini beans

Method
Place gammon in the centre of your slow cooker and then surround with all of the other ingredients but not the cannellini beans just yet.  Season well with black pepper.  Cook on low for 8-10 hours or high for 4-6 hours, stirring occasionally.  Four hours before you are going to serve up the gammon, add the cannellini beans (2 hours before if cooking on high).  When your ready to serve up, pull the gammon apart with a couple of forks and then serve with your chosen accompaniment (please see above).

And it really is that simple!

Slimming World’s EE SP Plan Day 1

So today was the first day of my week of EE SP and it was actually quite enjoyable!

For more information about Slimming World’s EE SP plan please see yesterdays post for the basic information – ideally you will need the books from the 2015 starter pack to plan your own week but I am more than happy for people to follow my 7 day example if they want to.

I forgot to say in yesterdays post that fully intend to have 10-15 syns a day and drink my usual 8+ cups of hot water a day.  The reason?  I always have better losses the more syns I have and I just love my cups of hot water these days as I feel beautifully hydrated and healthy because of it.

I want to follow SP 100%, so I won’t be consuming any non S and P free foods or any synned versions of free foods (synned yogurts etc) and will just be sticking to S and P foods only, along with my Healthy Extra choices and syns.  I see this plan almost as a detox, it’s clean eating at it’s very heart and that’s what I hope to enjoy about it.

So this morning I started by recording my starting weight in my food diary so that next Monday I can let you know the results.  I’m hoping for a really good loss but I know that although it seems to work for some it also appears to backfire for many who have, shock horror even reported gaining weight by following it.  So only time will tell!

So my first day looked like this:

By 11am I was very hungry, whether this was psychological I don’t know but I decided to have an apple, a nice speedy choice!

We then went for a walk along the canal in the sunshine to feed the ducks.  I like to get out for at least a small walk with my toddler every day if I can, that’s when we’re not busy doing something else on her social calendar of course.

A big salad, consisting of lettuce, tomato and cucumber, seasoned well with salt & black pepper with a light drizzle of vinegar, a packet of cooked chicken pieces and 2 tablespoons of Lighter than Light Mayonnaise (1 syn)  I served this with a warmed gluten free ciabatta (HEB)

I was absolutely stuffed after my salad so didn’t have any pudding (or fruit as it’s known on SP, lol!)

I like to enjoy some of my syns when my toddler has her sleep in the afternoon.  So I sat down with my fifth cup of hot water for the day, and had a packet of Metcalfe’s Skinny Topcorn, sweet ‘n salt flavour (4 syns) and 6 pieces of 70% Green and Black’s Dark Chocolate (6 syns) – I love this stuff.

So tonight I am going to prepare overnight oats for tomorrow morning, SP style of course and soak a gammon joint that I am going to pop in the slow cooker tomorrow morning!  Then there’s only lunch to worry about!  I’m finding that planning is very important where SP is concerned!
